Here it is! Finally the first of the 5 recipes I promised in December, after we made christmas cookies:
For one serving you’ll need:
500g flour
200g sugar
1 vanilla pod (vanilla extract works as well)
350g butter
2 egg yolks
1 egg
some lemon peel
1 pinch salt
Weight flour and sugar into a bowl and add the vanilla pod core. Make a hollow in the middle and sprinkle butter flakes all the way around. Dump the egg and the egg yolks into the hollow. Add lemon peel and salt, then quickly knead the ingredients with a mixer or by hand until you have a smooth dough.
Cover the bowl and chill it down for at least one hour.
Spread flour on the table and roll out the dough, use cookie cutters in any shape you like. Line them up on a baking sheet, cover them with a thin layer of egg yolk and bake at 175°C top and bottom heat for 10-12 minutes until the cookies are golden brown.
Decorate the cooled down cookies the way you like it and enjoy them!
We really liked about this recipe, that the cookies are that simple and yummy. On top they are easy to use by cookie cutters and nice to decorate.
